My most requested Thanksgiving recipe: Käse Spetzle Americanized.
I use the ingredients in the picture
1. Boil Noodles
2.Fry noodles in butter until desired browness and crispiness (think Julia Child)
3. Place fried noodles into deep casserole dish
4. Mix crispy onions into noodles.
5. Place slices of Havarti Cheese on top of noodles
6. Pour browned butter over it all
May be prepared a day in advance and re heated in the oven.
Nope, not keto friendly but I make it once or twice a year and triple the recipe and share.
No longer will the world be the same. Covid, 2020, elections, wars, and rumors of wars, hand washing and social distancing on a world wide scale have thrust us closer to the reality of Revelation chapter 13. Tomorrow, Tuesday the 24th, 2020, we begin chapter one of Revelation. Do you realize that there is a blessing for those that read, listen and obey the book? Yes, there is. Who doesn't need a blessing right now? I'm no Theologian, or Scholar, but I am a Berean, one who reads the Bible and digs deep for it's meaning a message to a heart that loves God.
If you plan on walking this journey with myself and others, know that there may be bumps along the journey through the Book as we are mere humans and are not perfect. So if we see a discrepancy in the scriptures, before walking away, take time to double, triple check and then do it again to find the answer that God provides us, for He is perfect.
Have you ever heard the word Apocalypse applied to this Book? I have, but the true meaning of Revelation is not the fear that the word Apocolypse conveys, it is the "Unveiling" of Jesus Christ. Let you heart not be troubled, listen in and hear the unveiling of Jesus and watch God cast out fear from your heart. He did for me. I went from a little girl reading Revelation under the covers with a flashlight, shivering with fear, to a child of God, who is looking forward to the Bridegroom's return for His Bride. Jesus is all we need, now and forever more.

With the weekend coming and the family spending more time together than ever before, let’s explore some topics that many of us could use help with.
The dreary cloudy days bring sadness to many. Families are under more stress than ever with less work, more bills, and having to learn how to Zoom School. We enjoyed a pajama day now and then back when our family Homeschooled, but dressed from the waist up for teachers meetings online, with the stress of accomplishing all of the assignments and conquering technology, after a sleepless night and a depressing day doesn’t help the old energy tank.
If you add the physical tank that is on low to the Spiritual tank that is on low, it can create a mess.
I have been wanting to share my story with you on the physical tank that was brought so low I almost check out and went to be with Jesus. However, He has other plans for me, so here I am to share my journey through MTHFR, Hypothyroidism, and Hashimotos.
Why in the world do doctors give these things such strange titles? After reading though medical research papers for over a decade, I can see that doctors are taught a completely different langue so that if the patient over hears a few of them sharing, we, the great unwashed, will not have clue as to what they are discussing.
The itisis’ are none other than inflammation of a particular part of the body. (which is another problem our medical system has. We are sent to different doctors for each part of our body that is having difficulty. Once there, we get 1-3 minutes with a doctor, he prescribes a drug or in the event the drugs on his list don’t cover the ailement, we are sent to a specialist, and or have surgery to cut out the problem)
Pretty soon we are on a long list of meds, and a long line of doctors appointments, and due to Covid, are on a long wait list to have procedures done.
We need our spiritual life to be healthy, and remaining in God’s word as we have in other podcasts and in our personal lives is most needed if we are going to be able to help others.
As mom’s and Grandmom’s we can easily set aside our own health for the sake of others. It’s easy to do for those you love. But, take a hint from the Stewardess who is giving your instructions before taking off on a flight. You know, the ones we never listen to.
Listen now, before placing the oxygen mask on your child, place the mask on yourself.
Did you hear me? You can’t help anyone else if you are passed out. So before you Zoom School all of your children, make sure you have time set aside to spend with Jesus even if you have to get up early to be with Him alone and let Him pour His love in to you so your love tank is full and you have more to share with others.
In the same way, exercise profits little, but if we care for the tent we have been given we may feel better and last a bit longer to enjoy this journey we call life.
Back in the year 2000 I had major health issues and shared this story in a blog post back in 2013:
This is long overdue, but my computer died awhile back and I had to figure out how to rescue this picture. I was amazed at the difference in myself when I saw the two bottom pictures next to each other. A short bit of history...
I did not know that I was born with a thyroid issue. My mother was told I had thyroid problems but..."that I would out grow them!" NOT....All through my life as far as we knew I was "fine" according to blood tests. My mom did her best and brought me back to the doctors and told them something was wrong....she hardly eats anything and gains weight, plus a whole host of what I now know as hypo symptoms. The stress and weight gain left me diabetic, but the diet changes helped me get that under control.ut as you can see by the pictures I was anything but "fine." In the past six months since my total thyroidectomy due to an enlarged thyroid gland with a huge goiter and nodules that were "suspicious" and so large that they were hindering my breathing and swallowing, I have learned alot about thyroid health. It was difficult to learn while the brain is in fog mode but so necessary to research on your own and stay active in your health care. Life could have been so much different from this vantage point, but hindsight is 20/20, and God is still in control so I trust that He will continue to hold me up through this life.
In about 2000 I realized I was gaining much weight, and really tried hard to find out what was going on. The blood tests were based only on the TSH test, so they were not revealing that the thyroid was struggling to survive.
I had developed severe allergies that left me with hives and anaphylactic shock so something had to be done. We had just finished homeschooling two sons, very active in life, and the daily care of my mother in law with Alzheimers fell to us. I had been trained as a CNA, specializing in Alzheimers care. I had also injured my knee around that time. The pain and stress of life as well as the "main gear" in my body not operating properly all my life and now sputtering for dear life left me overwhelmed to say the least, plus Diabetes was getting worse due the stress on the body. Yes stress can cause the sugars to go up too!
In the 2005 photo I can... now...see the hypothyroid face...puffy, thinning eyebrows, hiding the bald spot on the top of my head with thinning hair, extra weight gain no matter how well I ate. At that point I was unable to move without pain in every joint, was dizzy and off balance, had brain fog, and could not even concentrate enough to read a paragraph. I used to listen to the Bible being read online just so that I could still find comfort from God!
My mother in law died a few years ago, and my husband and I took some time to mourn and rest, and then in Jan of 2012 I was hit by a car in a local parking lot. It was a hit and run, but I wasn't injured. In Feb 2012 my car slid on the ice in an ice storm early one morning and I ended up spinning a few times and crossing the highway to end up stuck on a pole just before the car slid down the embankment into the rocks below, with the front of the car windshield inches away from a pine tree branch coming through the window into my face. After some chiropractic care, the Chiropractor thought there might be something else going on so he sent me to my physician.
My doctor scheduled an MRI and called me at home a few hours later and said...don't eat anything, how soon can you get to the hospital? We have an operating room ready for you. You have a gall bladder that is ready to burst with a gall stone stuck in the bile duct the size of a thumb! It was an awful surgery with a week long stay in the hospital and it really took a few months before I began to feel better. After some online research I realized that the difficulty breathing, the pain in my chest and the dizziness and balance issue as well as the pain at the top of my head were all from the gall bladder! Who knew? My arthritic type pain in the joints had dissipated after diet changes and some of the stress in my life being relieved over the years, so the pain I had before surgery was from my injured knee years ago and what I thought was "Seat Belt" trauma across my chest from the accident. The gall bladder did not issue me any warnings except a few days before the MRI. So a few months later, when I had one pain in my thyroid, I made an appointment.
My doctor schedule another MRI and Ultrasound and swallow test. Here we go again...second surgery of the year. I did have about a month to research before the surgery to make sure this is the right course of action. The thyroid had grown too large to take much more time to try to shrink it, and from what I had read, shrinkage of the thyroid doesn't usually happen.
The thyroid surgery went much better than the gall bladder surgery! I was preparing for the worst, but hoped for the best. The tissue was too large to get an accurate reading from a needle biopsy, but after surgery they confirmed there was no cancer! PS: if you find out someone may have thyroid cancer, please don't tell them that "if you do have cancer, it is the best cancer to get as it is treatable" It's still cancer.
It was a difficult year, after a few stressful life situations, but I see the car accident as God's mercy! If it weren't for the accident we would not have found the gallbladder problem before it was too late, or found the thyroid problem. I am now on Armour, a Natural Desicated Thyroid medication, 2 grains, and have my 6 month test coming up this week. No more insulin, just oral meds to help with sugars, but hoping that when my Armour med is correct I won't need those either although there are variables. It has been difficult to lose weight all my life. I am hoping to get to the appropriate Armour dose so that the gears will work properly again and the diet and exercise wisdom will once again work! I am not allowed to give up, for as long as I am on this earth, God has more in store for me! There is so much more to this life story that cannot be written in one post, so until we meet again....

It was a beautiful Sunday morning at the Church building this past week. A time of Worship and a time of listening to the book of Hebrews. “Let us hold on tight to the profession of or faith in Jesus, the better sacrifice.” It tied into the end of the Biblical Covenant Series that finished last week.
Since we have come to end, there must be a new beginning, which was announced on last Friday’s Kaffee Klatsch Episode.
The Covenant Series ended with an explanation of the time line of the Covenants, which led into a quick explanation of the End Times of this Church Age. While living in this part of History, we can see the world stage being set for the outplaying of the Revelation of Jesus Christ. To myself, and those of you that have read the back of the Book, we already have to answers to many of the worlds questions. We can see the cultural struggle of good and evil clashing before our very eyes. The foundational shift from Biblical thinking where God and His word is the ultimate authority still stand as truth. However, the mind shift of those who are attempting to crack this Biblical foundation, by
De-constructing and chiseling at it’s base is attempting to cause the continued erosion of the beautiful, abundant life that our God had intended back in the Garden of Eden in the beginning
the journey here on Moments with Moni, we will be making a huge leap from the beginning of time to the end of all Age, into the Book of Revelation!
I trust that you have found God’s word to be faithful and true through the account of the Covenants, and can now move onto more of God’s infallible word.
As we dive into Revelation, the plan is to take a literal, Historical approach, keeping in mind that this will not discount parable,s symbols, or figures of speech. Scripture, being God breathed, is infallible, however humankind is not. If we come across something that seems like a discrepancy, it is worth our while to dig deeper until we find what we might have overlooked.
The prophecy that we will be coming face to face with is a “forth telling of God’s word.” The de-bunking of Christianity tends to include new revelations that may not agree with the scriptures, and in turn will hold no water but will in the end, be burned up like straw.
Context is another extrememly important aspect of reading through the Bible. If we take a pre text and turn it into the main text, it is taken out of context.
Aside from the studying parameters, there is nothing on the christian calendar that has to happen before the great snatching away of God’s people. However, before you feel the need to turn this off due to disagreement, take the time to walk through the Covenant Series to understand the time frames of different people through world History and world future and beyond. Not all will be on the same path.
It is with all my heart I pray for the quick return of Jesus to take His Bride home, and yet, I know that the longer He takes to fullfill this snatching away, His mercy and patience plays out for more time for those who have not repented yet. With each new day on earth there is another opportunity to turn from our own ways, agree with God, and walk with Him, eventually, right into the heavenlies. So I try not to be impatient and use my time widely to share His message of Hope.
Revelation is the first book of the Bible that I ever read. It scared the begeebers out of me at 10 years old as I read it under the covers at night with a flashlight. Now some 50 years later, I can say that now that I have read and comprehend more of the rest oof all the Books in the Bible, Revelation brings much needed peace and tranquility even now as the world is in upheaval. Every age has had it’s uphealveals and here we are now amidst the Covid Catastrophe, when evryone could use peace and tranquility.
What does it look like on the world stage right now compared to God’s end time calender? The Nation of Israel has come together again back in 1948 although their eyes are still blinded to what God’s plan is. Apostacy grows stronger and stronger each day through false teachers that we have been warned against.
The Book of Timothy tell us the we are to understand this, that inthe last days there will come times of difficutly. For people will be lobers of self, lovers of money, proud, arrogant, abusivie, disobedient to their parents, ungrateful, unholy, heartless, unappeasable, slanderous, without self control, brutal, not lovers of good, treacherous, reckless, swollrn with conceit, lovers of pleasure rather than lovers of God, having the appearance of godliness, but denying int’’s power. Avoid such people, For among them are those who creep into households and capture weak women, burdened with sins and led astray by various passions, always learning and necver able to arrive at the knowledge of the truth.
Many will fall away and many will lead others astray. Many false prophets will arise and lead many astray, and the love of many will grow cold. Another item on the checklist of the last days scenario is the absence of America. Scholars speculate as to how this may happen, but it’s all speculation. The view I hold to is that once Jesus comes for His Bride, and raptures us out of this country it will be weakend and the United States of Europe will become a stronger power on the world stage allowing for a one world Government as we will see in Revelation 13 in future. There may be other catastrophes that play into the picture we will see in Revelation and in our future. For now, it’s back to History to get a running start at our story...
A long time ago, not in fairy tale land, there lived a man called John. He was the one called the loved of Jesus, the one who cared for Jesus mother after Jesus was cruelly killed on a cross while they looked on.
The Roman government did not like the stories that John wrote and spread about the man they called Jesus. John being one of the sons of thunder, ended up on an island called Patmos in 95-96 AD after the deathof Jesus and wrote a Book that God inspired him to write. This Book is known as Revelation. Not Revelations but Revelation. For there is one thing that book reveals, and that is Jesus Christ! John wrote other books as well, like I II & III John encouraging little ones in Christ to love each other. However, while onthe Island of Patmos he penned Revelation.

First let me hang your coat up. It sure is cold out there. The winter weather advisory was right.
Thankfully you only live around the corner, so it’s shouldn’t be too hard for you get back home.
Well, I guess that is safer than driving today. I hear there is a huge back up of cars on the highway leading up the pass at stateline, with the roads as slick as an ice skating rink. People are stuck in their cars, and some have been waiting more than 4 hours to start moving again!
Perhaps we could pray for them before we begin.
Dear Jesus, thank you so much for your faithful mercy and kindness towards us. Even through the storms in life You bring peace, as we trust you. Please continue to watch over those stuck on the road, and get them all home safely. Thank you as well for this warm home and time to fellowship with a friend. Amen
What’s that? Oh, yes, thank you for asking. I felt so badly having to ask my friends to leave last week. The water main is now fixed! I still have pots and jars filled with water that I am using up since them, rather than wasting it. Thankfully it is now fixed before the deep freeze arrived today.

Who is your friend. Lily, in India? And she works where? Yes, I have heard of that butterfly farm. It’s just amazing to see the butterflies swarm. I’ve seen them swarm in CA a few times, but too cold here in Idaho to see them much. The Butterfly farm in India is beautiful place to visit.
No, I haven’t been there. That’s a bit far for me to travel, but I’m happy to hear you are sharing my podcast across the ponds, and over to India. I wonder what it’s like there right now. They are in the southern Hemisphere and in a different time zone so it must be Spring there to our winter, and day to our night. I hear the “air is full of spices” there, and many are turning to believing in Jesus there as well.
I’m not sure if their churches are underground. The people seem so beautiful to me, and of course they are to Jesus and He loves them just as much as He loves us.

Ann H Gabhart River to Redemption. I just started reading it on my Kindle and love her voice. She reaches back into the past and gives the main character in her book a beautiful way of sharing the past. (In fact I use the same voice in one of my novels that I’m working on, which is why I recognized it right away)
The story begins with a little girl who’s family dies of Chollera in the SOuth, and she narrowly escapes death because of the kind hearted slave of an Inn owner who didn’t seem to be affected by cholera. He buried all the dead, and kept a memory record of who and where he buried them. He and another slave at the Inn, who ran the kitchen, took little Adria in to their care, and nursed her back to health and they are in search of a guardian for her before the owner of the Inn, who just returned now that things are better in town, sends Adria away to a less than ideal situation. I was hooked by the writing on page one, and only 60 pages in but thought I would recommend the book called River to Redemption to you.
Another book recommendation on a more theological bent is Bible Prophecy Answer Book by Ron Rhodes. I have heard Ron Rhodes speak on the Janet Parschall show in the past. What I love about the book is that Ron gives you the solid prophecies of the Bible to give you the information without making your mind up for you. He leaves you digging into the Bible to find the truth for yourself.

Now that we are done with the Biblical Covenants, it's time to embark on the time line that those covenants play out, at the end of time.

Before the conversational Kovid Kaffee Klatsch with you and I begins, a short story relating the atmosphere of home life as I grew up.
Every Friday night as a child, I watched family, friends and neighbors discuss, even argue, politics and religion around the kitchen table, after the dinner meal. At the end of the meal, Mom would raise an eyebrow to the children and we knew it was time to clear the dishes and begin hand washing, drying and putting them away, for no one had heard of an automatic dishwasher back in the 1960’s. There was no need for one, with capable older children in the home, who knew their chores. Mom would put the little ones to bed, and after the dishes were done, the older children would be allowed to stay up a bit longer to read and witness, what is at present, not so commonplace.
More adults would arrive after work, and sit elbow to elbow around the formica topped, plastic table cloth covered table. The beer and wine were enjoyed but not abused, while cigarette smoke hung thick in the air. These discussions would continue into the early morning hours. Yet, as if magically, no one was bullied for a differing opinion. No one was threatened with bodily harm. No one cursed, in English. Curses were reserved for the original tongue, for greater emphasis.
Fifty years later, I am still teased for not cursing properly. Not that I attempt it on my own in either language, but when pushed because others require a good belly laugh, I’m told to not quit my day job.
No matter, I would rather be known for being incapable of such a talent as cursing, then win an award on the subject.
Beer, wine, cigarette smoke, and cursing are not a part of Kovid Kaffee Klatch, but the passionate nature of such discussions are still treasured Moments.
Today I am thankful for the "Air that I Breathe" today.
Let's step into "Other People's Shoes" and walk into 2020, Have you noticed the Election stalemate for now? Ja,ich auch. Yes, me too.
God has reminded me that I am to trust Him, to keep my eyes focused on Him, and He so kindly fills me with peace. No I don’t know how the election results will turn out. It looks like it may take weeks to find out ALL that is going on.
Just continuing to pray for evil to be exposed and good to take command. And then…..l am reminded of the words I shared on the last Biblical Covenant story regarding the Messianic or New Covenant.
After explaining that Jesus is all we need, The natural conclusion,
to the Biblical Covenant Series, was a time line, to remind us of the beginning and ending of each of the Covenants, which brought a time line into our minds eye.
So, rather than tip toeing from The End of the Church Age, in which we are living, I jumped into the next thing on God’s Calendar…yup, the snatching away of God’s people, and then 3 1/2 years of trouble and then 3 1/2 years of bigger trouble followed by, well you get the picture.
Now we are here on earth with a big X that marks our spot, then all of a sudden, those that love Jesus and have entered into a Covenant Relationship with Him are suddenly gone! Vanished off the face of the Earth. Not only that, but the Holy Spirit that resided and abided within God’s people that were Raptured, will be taken out of the Earth and the restraining power of Good over Evil will also be gone!
How’s that for a little lite conversation over Kaffee? Entschuldiung, Pardon me, but as an ENFP, it’s difficult or better said, I’m really not interested in chit chat. Yes as an Extrovert, I love to meet new people and I need to talk with them and dig deeper into who they are and what they are passionate about, just to be able to remember their names! I wanna know what makes you tick. So, after about 15 minutes of what I would call having a great conversation, the possible introvert on the other end feels like they have been under an FBI investigation. Too many strikes against me already, being a German, and ENFP.
So, I have learned to c a l m i t d o w n.

It reminded me that I wanted to share my take on the Artesian bread recipe that I have been using for a few decades now.
Well, I have retired the recipe for myself because it is not low Carb, but for those that want a healthy bread with no added preservatives or chemicals it tastes great and very easy to keep on hand. Since I can’t hand you the loaf that I mad for you through the Microphone, I will post the recipe and photos on the Blog at Moments for Moni. You may not know this yet, but I’ve been Delving into learning Video, which is a whole other world compared to Podcasting which includes Lighting, cameras, lipstick, foregounds, backgrounds, green screens, apps, and more apps, movie editing programs, pictures and video, angles, and more lipstick, and then add in everthing you know about podcasting. Set up the entire room, get it just right, hit the record switch, and viola….the neighbor turns on some kind of really loud machine!
Really?? I had to laugh, I mean it’s pouring rain, so I knew it could’t be a lawn mower, or a snow blower, and the major part of all the house building is done in our immediate area. I ventured look out the window and only saw dark clouds and rain while I made my way to the front door.
There is it was in the neighbors yard….a shiny new tiller!
I guess that means more time for research.
Laundry and lunch time! Yes the go together. This is a home, not an office. The focus of a Homemaker and a Helpmate is on the family and the home. So, while the neighbor is making noise, my maids, the washing machine and dryer will be doing a bit of work of their own. After I get them started, then off to make lunch and plan dinner, in case I have another opportunity to record again this afternoon.

I want to thank you, you know who you are, who held me accountable to my writing. Yes, that is why I started podcasting and looking into Video Podcasting in the first place. This Bread would go great with a bowl of "Biblical Chili"
I went to the store the other day and saw such a beautiful display of cabbage in the grocery store that I had to praise the produce people for doing such a fine job!
Of course I had to pick up a head and bring it home.
Unfortunately the smell of cooking cabbage disagrees with my husband
so I thought I would try my hand at lacto fermentation!
It turned out nice with out that sauerkraut taste, but more
coleslaw like texture.
(Even though I'm of German descent, I don't care for sauerkraut)
This type of preserving food is full of live enzymes that help digestion and keep us filled with vitamins to give us enegy and keep us healthy, especially if one has indulged in too much candy after a particular holiday.
Basically mixed veggies in a jar with spices,
2 tbls salt per quart jar, 4 tbls per 1/2 gallon jar, and fill with distilled water to completely cover.
I use the 2 quart/half gallon jar to use up more vertical space in the fridge.
Place all ingredients in the jar and let stand on the kitchen counter for 2-5 days, gently shaking each day to distribute spices,
and then place in the refrigerator.
A wonderful way to keep the flavor of harvest alive in winter!

A self-confessed “late-bloomer,” Sue led a full single life as a high school teacher and as a missionary with Wycliffe Bible Translators, including two years in Brazil and six months in Papua New Guinea.
